Restaurant Petrus Hong Kong: On Top of the World

Like a King on his throne commanding all he surveys, Hong Kong’s Restaurant Petrus, sits 56 floors up above this most glorious of Far Eastern cities in the Island Shangri-La hotel, casting its glorious culinary shadow down over the exquisite mix of foods that dwell in the city below.

Restaurant Petrus epitomises excellence in fine cuisine. Chef de Cuisine, Frederic Chabbert is a master of traditional French cooking, and his talents in the kitchen make this restaurant positively glow. He has a passion for using only the very best quality ingredients, and uses spices and condiments sparingly to ensure that he gets the dish just right, creating an exact balance of taste, aroma and flavour.

At the front of house the maitre d’hôtel, Patrice Le Nouvel, is the man in charge and it is his responsibility to ensure that every guest is more than satisfied. Along with new head sommeier Nicolas Pierron they oversee the restaurant’s cellar of over 12,000 bottles and constantly seek out new wines to add to their stock of exceptional vintages. It is these unique wines that Nicolas expertly pairs with Chef Chabbert’s ever-changing degustation dinner menus to create a fine French dining experience that meets the exacting expectations of their guests.

Restaurant Petrus has been recognised for eight consecutive years with the widely acclaimed Wine Spectator’s Best of Award of Excellence as having one of the most outstanding restaurant wine lists in the world. Their wine cellar features a premium collection of Petrus wine and an extensive list of over 1520 choices of grand vintages from famous French Chateaux and premium vineyards around the world.

But this fine fare would not be complete without the lush decor that surrounds the diner when he takes of his daily bread. Extravagant designs of opulence depicted in traditional French style by interior designer Paul Leese, are reminiscent of the traditional and decadent European dining rooms of times past; richly folded drapery, impressionist oil paintings, murals, sculptures and crystal chandeliers. Reserved for the crown on this most regal head is a grand vaulted ceiling depicting a surrealist cloudy blue sky and galloping wild horses.

Solid proof of its mettle came when US publication HOTELS selected Restaurant Petrus as one of the five best hotel restaurants in the world for the decade in August 2000; the only hotel in Asia Pacific to receive the award. Nine years have gone by and, if anything, their standards and reputation have reached even higher.
